19 Oct – "can we have Indian?" well, no Indian restaurants really close, and I am no Indian cook, but I improvised. took the skin off chicken thighs, dredged in paprika, white pepper, coriander, and garam masala, sauteed in hot sunflower oil. kind of like blackened catfish. Chicken, basmati rice, packaged dal with plain yogurt, curried sweet potatoes with onions (not as good as Diane's, but at least she gave me an idea to work from), cauliflower

13 Oct – roasted chicken, mashed potatoes, squash, salad.
I sprinkled the chicken with lots of paprika and a little white pepper, stuffed it with a whole head of garlic and roasted it in a cast iron dutch oven at 425˚ for 1.5 hours. about 30 minutes in I drizzled it with olive oil. the last 15 minutes, I covered it.
