24 Feb – Maple Country Chicken
pan fried potatoes, shallots & garlic
oven roasted beets
salad

I adapted my friend Jeanell's recipe for this chicken

Jeanell & Jodi's Maple Country Ribs
sauce: 1 C. maple syrup
1/2 C. apple sauce
1/4 C. ketchup
3 T. lemon juice

1/4 tsp each: salt, cayenne, pepper, paprika, garlic powder, cinnamon

for ribs: make 1-1/2 x recipe for about 3 lbs boneless country ribs.
boil ribs first for two hours, then add sauce and bake covered @ 325˚ 
for 2–3 hours .

for chicken: mix the sauce. place 5 pieces chicken thighs/legs in an ovenproof baking dish. pour the sauce over the chicken. bake uncovered @ 350˚ for 1 hour 15 minutes, or until the chken is @ 175˚.  Take out of the oven, 
cover and let rest for 20 minutes (the chicken wants to ultimately be 180˚, 
so the resting time should bring it up to that temperature).
