Bretts Favre's Jambalaya


Brett Favre's Jambalaya
Servings: 10
Ingredients:
3 tbsp. olive oil
1/2 lb. andouille sausage
1/2 lb. smoked sausage
1 large onion
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
2 cups celery
4 gloves garlic, minced
2 bay leaves
1 tsp. salt
1 tsp. cayenne pepper
1 tsp. lemon pepper
1 tsp. Cajun seasoning
1 tbsp. oregano
1 tsp. white pepper
2 tsp. black pepper
1 tsp. granulated onion
1 tsp. granulated garlic
2 tbsp. fresh chopped parsley
1 tsp. thyme
1 tsp. basil
2 tsp. sugar
1/2 cup fresh chopped chives
1 (14 1/2 oz) can diced tomatoes
2 cups marinara sauce
1/2 cup chopped green onion
4 cups chicken tenders
2 cups chopped large shrimp pieces
1/4 cup chicken base
2 cups white rice

Instructions:
Slice the sausage into 1/4 inch coins.
Dice the celery, onions and peppers.

In a large Dutch oven or soup pot, heat the olive oil and sauté the sausages for 4 minutes.

Add onion, green pepper, red pepper, yellow pepper, celery, garlic, bay leaves, salt, cayenne pepper, lemon pepper, Cajun seasoning, oregano, white pepper, black pepper, granulated onion, granulated garlic, parsley, thyme, basil, sugar, chives, canned tomatoes, marinara and green onions; stir and simmer 10 minutes.

Add chicken tenders and cook an additional 15 minutes.

Add shrimp pieces and simmer 10 minutes.

Add chicken base and rice; cover and simmer an additional 25 minutes or until rice tests done.
